PKN: A Farmer-Forward Company Revolutionizing Plant-Based Milk

When it comes to plant-based milk alternatives, pecan milk company PKN is revolutionizing the category by looking to America's past. The only edible nut indigenous to North America, the pecan is a historical staple that PKN CEO Laura Shenkar is determined to usher into the modern era using sustainable methods of production and cultivation. PBFA had the wonderful opportunity to speak to Shenkar about how exactly her company PKN is achieving this vision and why the pecan might just be the answer we’ve been looking for when it comes to holistic, sustainable, and regenerative plant-based milks.

America Rooted in Pecan Production

PKN was founded in 2021, when Laura Shenkar – who comes from a farming family and carries a deep expertise in water conservation and strategy – was working on a water conservation project in Texas. Tasked with evaluating farmland around San Saba, self-proclaimed "Pecan Capital of the World", she noticed pecan trees thriving naturally along the periphery of water-intensive crops.

"I simply didn't get why there wasn't pecan milk on the shelf," says Shenkar. "Pecans are indigenous to this region, they're naturally drought-resistant, and most Americans are familiar with their rich, creamy taste."

The company's name derives from "pacane," the Native Algonquin term for the pecan. The only naturally growing major nut tree in North America, the pecan was the most valuable nut species to the early indigenous peoples of the continent, and was readily harvested and cultivated especially during the autumn season. Using principles of agroecology and regenerative agriculture, Shenkar saw an opportunity to make a product that not only nourishes the soil it's derived from, but also the farmers and producers who cultivate it.

An Integrated and Farmer-Forward Supply Chain

Shenkar knew if she was going to start a company, it had to have an integrated approach to sustainability throughout the supply chain. The company sources exclusively from American pecan farmers and works with the only grower-owned, non-profit shelling operation in the country. This arrangement provides transparency and fair compensation for farmers while ensuring high-quality, sustainably grown pecans. PKN's commitment to sustainability also extends through to their manufacturing process via innovative upcycling practices. Rather than using whole pecans, the company utilizes smaller pieces that wouldn't qualify for retail sale or confectionery use.

"We're looking at how we can get more food out of our food," explains Shenkar. "There's no reason to use whole pecans in this process."

A Regenerative Vision for the Future

Looking ahead, PKN sees significant market potential as California nut production faces increasing water constraints. "California has already passed peak production of nuts," Shenkar notes. "Last year alone, 80,000 acres of almond land were abandoned." With at least 36% of Americans being lactose intolerant (up to 80% among certain ethnic groups), and plant-based milk already capturing 15% of the liquid milk market, PKN believes pecans could help fill the growing demand for sustainable plant-based dairy.

Their product line – all shelf-stable – features the Original flavor of PKN pecan milk, as well as a delicious and creamy chocolate variety. And most recently, in response to consumer demand for simple, recognizable ingredients, the company launched "Zero," a clean-label product containing only upcycled pecans, vanilla, and salt.

The company's vision extends beyond increasing sales of their pecan milk. Within ten years, PKN aims to become a catalyst for regenerative agriculture practices and sustainable farming. "We want to measure PKN's success based on how much we've caused the land that these farmers own to increase in value. Not just financially, but in terms of soil health and water resources," says Shenkar. Currently available in select retailers throughout the country, PKN has ambitious expansion plans. The PKN team, presently operating as a team of eight, is exploring new product developments that we are excited to keep an eye out for.

Setting a New Standard

What truly sets PKN apart is their holistic and regenerative approach to sustainability – from supporting native farmlands in Texas to promoting regenerative farming practices and creating efficient supply chains. As Shenkar puts it, "We want our competition to be about who's using the coolest technology, who's doing the most upcycling, who's taking better care of their farmers. That's where we want this industry to go."
